4 Fluke Fillets (about 2 Lbs)
1-1/2 Cups Seasoned Flour (salt, pepper, cayenne to taste)
3 beaten eggs w/ 3 tbls chopped Italian parsley
Veg oil (for Frying)
1-1/2 cups dry white wine
4 Tbls unsalted butter
3-4 garlic cloves smashed
3 Tbls Olive oil
chopped parsley and thinly slice lemon for garnish
The Juice of 1 lemon
Salt & pepper to taste

Pat the fillets dry and press into flour and shake off excess
Dip in egg wash allow excess to drip off
Heat oil in sauté pan and sauté until golden on each side turning only once
Remove from pan to paper towels
Drain off excess oil
Return pan to medium high heat
Saute Garlic in Olive Oil before it browns add wine and lemon juice salt & pepper
Bring to a boil then reduce heat swirl in butter
Return fillets to pan- bathing the fillets with the sauce
Spoon sauce over fish on plate top w/ lemon slice sprinkle parsley for garnish
Serve with rice Or Orzo
