Yellow Rice (Trini style)

2 cups of long grain rice
1/4 red sweet pepper
2 green onion stalks
hot red pepper flakes (optional)
2 tbsp. canola oil
2 pks. of Accent (or Goya) Culantro y Achiote


Preparation:

Bring to boil enough slightly salted water to cook 2 cups of rice al dente. Aside cooked rice.

Thinly dice red pepper.

Separate the white end of the green onion from the green part.
Thinly slice both pieces, keeping them separate.

In wok, heat 2 tbsp. of Oil (Do not use Olive Oil) until smoking

Add white pieces of the green onion and stir for 1 min to avoid burning
Add the red peppers and continue stirring for another min.
Add green stems of onion and stir for another min.
Add 2 packets of Accent seasoning and pepper flakes(optional). Continue stirring.
Add rice and continue stirring for five minutes until the rice is completely coated.
